Strawberry Field Green Salad

with White Balsamic Vinaigrette

ingredients
  • 1 cup sliced, toasted almonds
  • 6 cups mixed field greens
  • 1 cup crumbled blue cheese
  • 1 pint fresh strawberries, sliced
  • 1 small purple onion
  • 1 cup dried cranberries
  • for White Balsamic Vinaigrette
  • ⅓ cup white balsamic vinegar
  • ⅔ cup olive oil
  • 2 teaspoons yellow grainy mustard
  • 3 tablespoons honey
  • 1 shallot or 2 green scallions, finely chopped
directions
  1. Toast almonds at 300° on a baking sheet for 10-15 minutes or until browned.
  2. In a bowl toss almonds, field greens, blue cheese, strawberries, onions and cranberries.
  3. Add White Balsamic Vinaigrette to taste and toss again.

  5. process all ingredients in a processor and chill.
