Sassy Salsa Chicken

with Mango Salsa

ingredients
  • 4 to 6 boneless, skinless chicken breasts
  • ½ cup lite olive oil
  • ½ cup fresh lemon juice
  • 1 teaspoon lite salt
  • 1 teaspoon white pepper
  • 2 teaspoons fresh scallions or onion powder
  • ½ teaspoon thyme
  • 1 clove garlic, crushed or diced
  • ½ teaspoon paprika
  • for Mango Salsa
  • 1 ripe mango, peeled and diced into ¼2; inch cubes
  • 3 tablespoons vegetable oil
  • ¼ cup fresh cilantro, minced
  • Juice of 1 lime
  • ½ sweet onion, finely diced
  • ½ teaspoon salt
  • 1 small red pepper, diced
  • ½ teaspoon ground cumin
  • ½ Jalapeno pepper, seeded and finely minced
  • ¼ teaspoon cayenne pepper
directions
  1. Blend all the ingredients togethers except chicken.
  2. Add chicken, marinate overnight and grill.
  3. for Mango Salsa
  4. Mix and allow several hours for flavors to blend.
  5. Spoon over grilled chicken breast.
